Every pour, plate, and perfectly-run event at Mulligan's has one of these faces behind it. They'll book your bay, build your night, and talk trash on the courts — get to know the crew before your next visit.

Craig O'Malley

Craig wears all the hats at Mulligans — general manager, handyman, teacher, vibe manager — but what he’s most passionate about is creating moments of magic for guests and helping his team grow. He pushes staff to master their skills and become the best version of themselves while they’re with us. His go-to order is a full Irish breakfast with a black coffee. Off the clock you’ll find Craig running (yep, by choice), camping with his dogs Barley and Clover, or wrangling his squad of nieces and nephews.

Handicap: 12 — swears the sims read two strokes heavy

Go-to club: a 7-iron, for literally everything

Hidden talent: fixing the ball machine no one else can

Fiona Byrne

Fiona is our director of hospitality, turning drinks, dinks, and bites into full-blown experiences. She thrives on crafting menus, watching them come to life behind the bar, and seeing that first sip spark a guest’s smile. For her, it’s never just a cocktail — it’s connection and creativity. Her go-to order is loaded curry chips paired with whatever fun concoction she dreams up that day.

Handicap: 30-something — but a 5.0 behind the bar

Fiona Byrne

Paddy “Par-Tee” Doyle

Paddy is one of two kitchen managers at Mulligans. He’s the man, the myth, the legend behind our happy place burger and god-level garlic aioli. He keeps the day-to-day kitchen operations running smoothly, the fryers flowing, and the customers happy. His go-to order is bangers and mash washed down with a good old stout.

Handicap: 18 on a good day, 24 after a heavy lunch

Former life: semi-pro darts player (don't test him)

Most guarded secret: the garlic aioli recipe

Maeve Kelly

Maeve is the magician behind your dream private event at Mulligans — making your vision come to life from start to finish. At lunch, she’s probably snacking on fried pickles, and by 5pm she’s sipping a spicy marg. If Maeve were a drink she’d be a whiskey ginger — warm, bold, and a little intense.

Handicap: 22 — event planning is her real short game

Biggest event pulled off: 250 guests, zero meltdowns

Emergency kit: gaff tape, fairy lights, a spare corkscrew

Rory Callahan

Rory is the person behind Mulligans’ marketing and events, capturing the magic, memories, and good vibes every day. His go-to order changes daily, but he loves the fish and chips and a cold cider. If Rory were a menu item he’d be bread and butter (because nothing beats the classics).

Handicap: 15, with a highly photogenic follow-through

Camera roll: 90% guests having fun, 10% his dogs

Claim to fame: one unwitnessed trick-shot cornhole toss
